This 2021 Dr Mayer Pinot Noir is made in Timo's distinctive 100% whole bunch style and within a distinct flavor spectrum too. It has olive brine, hints of tapenade, pimenton paprika, just-ripe cherries, dehydrated orange zest, Sichuan peppercorns and spines of acidity that flex over the tongue. This is wild, stylized and high-toned. I'm a big proponent of being proud of what you've got right underneath your nose, and to me, this speaks of Yarra Valley through a focused lens. A place, and a person, as well. It's exciting drinking, but don't go at it expecting something straightforward: this is complex thinking juice. Dr. Mayer Pinot Noir 2021 is one of Timo Mayer’s more serious, structured expressions of Yarra Valley Pinot. Lifted aromas of red cherry, raspberry and cranberry mingle with rose petal, baking spice and a gentle whole‑bunch herbal note. The palate is light‑ to medium‑bodied yet concentrated, with pure red fruit, bright acidity and fine, chalk‑dust tannins that give length and definition. A focused, characterful Pinot Noir that drinks well now but will gain in complexity over the next 5–8 years.
