This 2019 Ares Shiraz is firm and savory and shaped by a pliable rachis of tannin and spice. The fruit strays across blood plums, mulberries, damsons and licorice and leaves a trail of star anise and aniseed its wake. The bouquet is packed with blackberry, plum and cassis, layered with dark chocolate, espresso, vanilla, cedar and warm baking spice. On the palate it is full‑bodied and opulent, with a deep, concentrated fruit core, plush yet structured tannins and well‑integrated oak, leading to a very long, velvety finish.
