Description

Les Lys offers a particularly refined expression of Kimmeridgian terroir, combining subtlety, elegance and real capacity to age. On the palate it seduces with aromatic finesse: lemon zest, white flowers, citrus and flinty minerality. The attack is lively and taut, the texture precise, and the finish long and ethereal. Situated on the south‑east facing slopes of Chablis, the Les Lys parcel at Domaine Defaix is a “partial monopole” (3.5 ha of the 5 ha climat) of Clos des Rois. The Kimmeridgian surface soils over a poor, moist marly‑clay subsoil encourage deep rooting, while an average vine age of around 45 years brings concentration and complexity.
