There are 5,400 bottles of the NV Extra-Brut Blanc de Blancs Les Pierrières (2017), disgorged in March 2021 after 36 months on the lees. Wafting from the glass with scents of confit citrus fruit, lemon zest, spring flowers, almond paste, pastry cream and wet stones, it's medium to full-bodied, satiny and precise, with terrific cut and tension, concluding with a long, saline finish.
Ulysse Collin Les Perrières Blanc de Blancs Extra Brut (2017 base) is a single-vineyard champagne from a 1.3 ha plot of old Chardonnay vines in Congy, within the Côteaux du Petit Morin. The shallow clay topsoil over Campanian chalk mixed with black flint gives this wine its striking minerality and energetic character. With barrel fermentation using indigenous yeasts, extended lees aging (around 36 months), and very low dosage (1.7 g/l), it delivers intense chalky precision, citrus, stone fruit, white pepper, and smoky minerality combined with remarkable purity, tension, and vibrant freshness. A powerful yet chiseled Blanc de Blancs that highlights the unique singularity of the Les Perrières terroir.
